Poly bags also keep sensitive materials protected from the environment, preventing dust, liquid spills or humidity changes from damaging your product. Heat sealed poly bags also act as a tamper proofing security feature as they cannot be reclosed once opened (a zipper bag or adhesive strip poly bag could be reclosed!).
